For the love of chorizo: homemade chilli & chorizo burgers


At the moment, I'm absolutely loving chorizo - it is fabulously delicious and can be added to almost every meal to give it that kick, spice or extra flavour.

I find myself experimenting, always looking for new ways to include a few chunks of chorizo in my favourite dishes. And the latest to be 'chorizo-fide' is my yummy, scrummy homemade burgers.

And if you're watching the waistline but are craving a take-away or indulging in something super tasty, then this will make the perfect alternative - and it is a whole lot healthier. And best of all, it can be done in 10 simple steps.

What you will need:

70g chorizo
2 x small white onions
12 x water biscuits / crackers
750g minced beef
1 x medium egg
1/2 teaspoon of chilli powder (can add more or less depending on how much spice you like)

Time it will take: 15 minutes to prepare / 25-30 minutes to cook

This will make: 7 x medium sized burgers

Step-by-step instructions:

1. Pre-heat oven to 180 C / 350 F

2. Chop your onions and chorizo into small chunks.

3. Put the water biscuits or crackers in a plastic sandwich-bag and bash with a rolling pin until they have been broken into small, fine pieces. I know what you're thinking: crackers? Trust me on this one, adding crushed crackers into any homemade burger is a must.

4. Crack the egg into a pot and beat it using a fork.

5. Put the chopped onion, chopped chorizo, crackers, beaten egg, your chosen amount of chilli powder and the beef mince into a bowl.

6. Now it's time to get messy! Get your hands in that bowl and mix it all together - remember to take off all your jewellery first, you don't want to find a ring in the middle of your burger.

7. When it's all mixed well together, use your hands to make seven medium-sized balls and flatten slightly into a burger-like shape. Note: depending on how big or small you want each burger, you may get more or less out of the mix.

8. Place burgers onto a baking-tray, then put in the oven and set the timer to 25 minutes.

9. Check on the burgers after 25 minutes - if you want them to be a little more cooked, leave them for another five minutes. Remember, stay safe and use an oven glove when handling the baking tray, it will be hot!

10. When you are happy with the burgers, remove from oven and serve immediately - nobody likes a cold burger.

I suggest serving the burger with homemade sweet potato wedges and salad, however, you could plate it up in a bun or / and with chips - and of course, a big dollop of ketchup!
